Ballerina

Ballerina is a early mid season variety, these are a yellow fleshed, shallow eyed tuber with very smooth yellow skin. Ballerina has firm cooking qualities that are perfect for potato salad and are known to be a very tasty variety. Ballerina is not easily bruised and washes up very well, it also has a great storage life due to its long dormancy period.

Cooking – Firm cooking qualities. Great for Potato Salad, Boling, Roasting or Baking

Planting – Place potatoes 12-18cm” deep and a short distance apart with at least 3 feet between rows.  Cover potatoes with 3-4” of soil. Larger potatoes can be cut prior to planting and should be planted a bit deeper. Ensure there is an equal number of eyes on each cut piece.

Growing – Hill plants once they begin to emerge from the soil.  Continue to pull dirt up around the plants as they grow.  Keep the soil moist, but not overly saturated during the growing season.  Containers may need daily watering.

Harvest –  Flowering is often an indicator young potatoes are almost ready to harvest.  For winter storage, potatoes should remain in the ground until light frosts or natural maturity dry down the leaves and stems.
